William Lawson :

From the Whisky pilot by Uniqum Systems :
Created in 1849 by Wiliam Lawson.
Glen Deveron is one of the malts used in the blend.
Today the plant in Coatbridge proiduces about 20 million bottles of William Lawson per year.

William Lawson started out as a whisky merchant in Dundee in the 19th century. The company had severe financial problems during WWII but managed to recover and moved to new Liverpool a few years after the war. At that time Liverpool was bustling with activity and Lawson's business expanded rapidly. They invested in a bottling plant in Coatbridge, necessary due to the increased export, which in turn was achived largely thanks to their business relation with Martini & Rossi.
In 1972 they bought the Macduff Distillery, a natural step to ensure a contious flow of the whisky that was the heart of their blended whisky. Today the annual output of the Coatbridge plant exceeds 20 million bottles.

One of the few companies to move successfully to Scotland from England.

They use ex-bourbon casks
The Dailuaine (Dale-yoo-in) distillery have 3 wash stills and 3 spirit stills.

From The Dailuaine distillery folder:
For more than 100 years distillery "pluggies" puffed through the Highland daily, talking supplies of barley and coal to the distilleries and returning loaded with casks of whisky.
At DAILUAINE an engine driver, fireman and railwayman were employed full-time to run the much-loved steam locomotive whose gleaming paintwork and polished brass and copper made her a "joy to behold".
The engine was one of the last to run and is now being restored by United Distillers.

William Mackenzie, a farmer at Carron and Rinnachat, founded the distillery in 1851 in hollow by the Carron Burn and named it from the Gaelic for "the green vale".
By 1863, the arrival of the Strathspey Railway at Carron, only some three miles away, opened up the outside world and influenced the long-term future of Dailuaine Distilllery which was eventually to be linked by its own siding into the network of the "whisky railway" of the Highlands.
When Mackenzie died in 1865 the distillery was let until 1879 when his son, Thomas Mackenzie, became a partner in the business and set out to rebuild Dailuaine in a larger and more modern style and, with an annual output of 160,000 gallons, making it one of the largest Highland distilleries.
In 1891, Mackenzie & Co was converted into a limited liability company, The Dailuaine-Glenlivet Distillery Ltd which seven years later amalgamated with The Talisker Distillery Ltd, Skye, to form Dailuaine-Talisker Distilleries Ltd.
Thomas Mackenzie, who had a substantial interest in the Talisker Distillery, became chairman and managing director of the new company, which also owned a grain whisky distillery in Aberdeen and Imperial Distillery, which Mackenzie had built on the Speyside railway at Carron Station.
By 1907 railway sidings linked Dailuaine with Imperial and Carron warehouses. Mackenzie was an ambitious entrepreneur who strove to develop the company's business in whisky blending as well as distilling, setting up agencies for their brands at home and abroad.

Not long afterwards the whisky industry was affected by a recession and in 1910 the company traded at a loss and went on to suffer a series of misfortunes, with heavily reduced demand, lawsuits and the destruction of the Aberdeen distillery by fire.
When Mackenzie died in 1915, a widower with no family, the business was bought by a consortium of customers, including James Buchanan & Co. Ltd, John Dewar & Sons Ltd and John Walker and Sons Ltd, all part of United Distillers.
Dailuaine was substantially rebuilt after a fire in 1917 which caused extensive damage and production resumed in 1920 after which, for the next 40 years, Dailuaine relied on diverse and ingenious sources of power for lighting and for driving the machinery.
Four steam engines were employed and two water wheels gave an alternative source of power for the maltings. These water wheels worked in tandem; one was sited next to the main engine so that it could be connected during a drought or other emergency, and the other was about 200 metres away, by the burn – the two were coupled by a continuous wire rope supported on overlead pulleys.
Dailuaine was connected to the national electric grid in 1950 and a major reconstruction took place in 1959-60. The stillhouse, which had been increased from four to six stills was modernised in 1965; a new mash tun was installed in 1993.
Two years later the Strathspey railway closed and the much-loved puggies ceased to run. An 0-4-0 saddletank locomotive, made by Barclay of Kilmarnock in 1897, had worked the line until 1939, when it was replaced by another Barclay engine, Dailuaine No. I, which a retired British Rail engine driver described as "truly a joy to behold", with well-cleaned paintwork and polished brass and copper.
Distillery employees gave Dailuaine's puggy its last unofficial run in 1970 when it was removed to the Strathspey Railway Association steam railway at Boat of Garten, Inverness-shire. However, No. I has now been returned to United Distillers and is being restored for display at Aberfeldy Distillery.
Today Dailuaine can be enjoyed as a single malt available at the distillery and selected outlets in bottles featuring the distillery symbol of a badger, a species associated with the surrounding area.

Cardhu

NEEDS TO BE EXPERIENCED

From its origins in a small farmhouse on the windswept braes below Dallas Moor to its international acclaim as a great Highland Single Malt Whisky, the history of the Cardhu is a classic of its kind. Distilling whisky was, in Scotland's history, a small-scale family affair.

The name of the farm in its anglicised spelling was Cardow Farm, but to the gaelic speaking locals, it was Cardhu -The Black Rock.

It is a unique characteristic of Cardhu that, in a whisky world dominated by men, women have played a major part in the history of the brand.

It was under Elizabeth Cumming's direction that Cardhu grew from a tiny, local distillery to one of the leading Speyside Single Malts.

The quality of Cardhu's product attracted many would be buyers. Finally in 1893, Elizabeth sold the distillery to John Walker & Sons of Kilmarnock and her son was installed as manager of the distillery, and a board member of Walker's with a substantial shareholding. Although a few bottles of Cardhu single malt became available over the years it was a key ingredient of the firm's famous "Johnnie Walker" that Cardhu was enjoyed, unknowingly, by Scotch drinkers the world over.

The history of the distillery, its treasured arts and traditions, the pure, clean flavour of the natural Highland ingredients, the care of making and the long, slow maturing are all to be tasted in a glass of Golden Cardhu – Truly a great Highland Single Malt.

A request from Chris:
Dear sir/madam
I am researching my family history.  My surname is cardow and i would like to know if you can give me any information on that family surname.

Remark :

Canadian club was first produced in a world where spittoon was considered quite sophisticated. Life was harsh and the whisky harsher. Hiram Walker, its founder, set out to create a different whisky that offered a smoother, cleaner taste. Canadian club's distillation process is long and intense. It takes out the harshness and leaves behind the delicate character of the whisky. The Bourbon influence is important, because it adds some of the richness and fruitiness of American whiskey. Part of Hiram Walker's genius was to combine this Bourbon aura with light, smooth and mellow qualities. This is the balance that produced the definitive Canadian whisky.
Canadian Club – No Ordinary Whisky

Note: Canadian Whiskey is not a Bourbon but Canadian Whiskey..

Allied Walker Distributors Ltd Says:
The 12 year old. The extra 6 years maturing in wood produces a darker spirit with more of the traditional characteristics of aged whiskies and an even richer, more aromatic flavour.
Definitely no ordinary whisky.

JIM BEAM

Location : Clearmont and Boston
Region : Kentucky
Country : America – USA
Type : Kentucky straight bourbon whiskey
Distillery :  James B. Beam Distilling Co., Clermont, KY.
Founded : 1795 and Established 1794
Owner : Whyte and Mackay now owned by American Brands, whose other interests include Jim Beam.
Producer : JIM BEAM BRANDS CO.
510 Lake Cook Road
Deerfield, Illinois 60015
(847) 948-8888
Water : ?
Remark : Here's a rip from the official Jim Beam site : (Please respect the copyright.)
In 1795 Jacob Beam, the great-grandfather of the legendary Jim Beam, sold his very first barrel of bourbon in Washington County, located in the heart of Kentucky.
If you ever get down to Bardstown, Kentucky you can visit the Oscar Getz Museum of Whiskey History, with a collection spanning 225 years dating from pre-Colonial days to post-Prohibition years, including what is believed to be the very first whiskey still.
In 1820 Jacob's son, David Beam takes over the reigns of the Beam family distillery.
David M. Beam, father of Jim, was one of the great bourbon distillers of all time. He handed down distilling secrets and wisdom that after two-hundred years are still in the mix, helping to make Jim Beam Brands one of the greatest, and most continuous family businesses in the history of the country.
In 1853 David M. Beam, son of David, takes over the Beam family distillery and moves it to Nelson County, KY.
In 1880, James B. Beam began working at his father's distillery, learning the family bourbon making secrets as the fourth generation of Beams to carry on the family tradition. For 67 years, Jim Beam remained in control of his family fortune. This included surviving the 14-year span of Prohibition, during which Colonel Beam ventured into fruit farming, rock quarries and coal mining. Within four months after the end of Prohibition in 1933, he was back doing what he knew and loved best — making bourbon. Near the age of 70, Jim Beam relocated and constructed an entirely new, bigger distillery in Clermont, Kentucky, near his Bardstown home.
In 1894 Jim Beam takes over the family distillery.
James Beauregard Beam was only 30 years old when he took over the family distillery, a year before its one-hundredth anniversary in 1895
In 1895 Jim Beam Bourbon celebrates Centennial Celebration.
In 1933 With the repeal of prohibition, the James Beam Distilling Co. of Clermont, Kentucky, was incorporated on August 14, 1933.
In 1946 T. Jeremiah Beam, Jim Beam's son, was listed as President and Treasurer of the James Beam Distilling Co.
The legendary Jim Beam, the fourth generation of Beams to carry on the family bourbon-making tradition established in 1795 by Jacob Beam, gathers with his family in 1910 outside his historic home in Bardstown, KY, including his son T. Jeremiah Beam, his daughter, Margaret Beam, and his father David Beam.
In 1951 F. Booker Noe Jr., currently Master Distiller Emeritus of Jim Beam Bourbon, begins working in the family distillery at the age of 21.
Booker Noe's mother was a Beam, and his grandfather was Jim Beam, but even though Beam isn't his last name, Jim Beam® Kentucky Straight Bourbon Whiskey is still his favorite of all.
Booker is also a Master Distiller Emeritus, and has created his very own bourbon, Booker's. It's a true connoisseur's sipping bourbon, and together with Booker's other "small batch" bourbons, it's got its very own website.
In 1964 U.S. Congress declares bourbon "America's Native Spirit".
In 1964, Congress passed a resolution designating "Bourbon whiskey as a distinctive product of the United States." Since that time, by law, no whiskey can be called Bourbon unless it is made within the United States, according to the Bourbon formula.
Why All Bourbon is Not a Whiskey, and All Whiskey is Not a Bourbon:
In order for a spirit to be called a straight bourbon whiskey, it must be made from a fermented mash of no less than 51% corn and aged for at least two years (Jim Beam is aged a minimum of four years) in a new charred oak barrel. Once these basic requirements have been met, variations can be made to create distinctive flavors and aromas.
In 1995 Jim Beam Bourbon® celebrates 200 years of American history and family tradition.

Here's some more from MaltAdvocate :
Actually, the ubiquitous use of the word "bourbon" to describe the dominant style of U.S. straight whiskey is a fairly recent phenomenon, owing in no small part to the rivalry between the two largest producers, Jim Beam and Brown- Forman.
Jim Beam, on the other hand, does not have a distillery in Tennessee. All of the U.S. straight whiskey it sells is bourbon and it invests considerable resources in promoting "bourbon" as synonymous with quality and authenticity, tweaking their rivals in the process.
Since Jim Beam and Jack Daniel's are consistently the two top selling U.S. straight whiskies, talking about "bourbons" can be a problem since the term technically excludes two of the industry's top brands. (both Jack Daniels and United's George Dickel, the other Tennessee Whiskey.)
Jim Beam is an example of a bourbon that uses rye, but not very much (only about 13% of the mash).

Another rip (Sorry forgot the source) :
Jim Beam Colonel James Beauregard Beam was born in 1864. The Civil War was raging no far away. He died in 1947, the year of the first televised presidental address. His father, David M. Beam, was a 3rd generation Kentucky distiller. James B. made it 4 generations when he joined the family business in 1882. A few years later, after David M. retired, Jim Beam and Albert J. Hart (his sister's husband) built a new distillery to take advantage of a new railroad line. At the same time, about 2 miles down the track, R.B.Hayden was building the original Old Grand-Dad distillery. The Beam & Hart Distillery was famous for a brand the called Old Tub whiskey. Jim Beam reopened the plant in 1933 after Prohibition with new partners. He was 70 years old. The descendants of Jim Beam and his brother Park and uncle Joe have made whiskey for dozens of different Kentucky distilleries, including the ones that carry Jim Beam's name today.

The Laphroaig is matured at the distillery in American bourbon casks. In the warehouse, the Kentucky origins are sometimes evident on the cask ends, which bear stencils of Jim Beam and Jack Daniels. The proprietary bottlings of Laphroaig are at ten and fifteen years old, all from bourbon casks.

From the Whisky pilot by Uniqum Systems :
The name Beam is derived from the a German by the name of Böhm who emigrated from Germany to Maryland, USA in the 18th century. The first of the family to distil whiskey was a man named Jacob Beam, back in 1795. His great grand son, David founded a distillery in Clear Springs, close to the location of the what is today the Jim Beams distillery in Clermont. Jim Beams distillery was built after the prohibition and was built from oak. It was extensively rebuilt in 1970's. They also bought a distillery in Boston, Nelson county, but the company prefer to talk of the two distilleries as Beam, therefore the address Clermont-Beam found on the labels.
The company was bought by American Brands 1967.
Across the road is Jim Beam's American Outpost, which introduces you to the making of fine Kentucky bourbon. You'll see the T. Jeremiah Beam House, listed on the National register of Historic Places, the country's oldest moonshine still, an 1800s cooperage museum, film, and a bourbon warehouse (free, M-Sat 9-4:30, Sun 1-4, 502/543-9877, handicapped accessible).
