Blue Note: A fourth Bluegrass distillery, The Four Roses Distilling Company near Lawrenceburg, gives tours to individuals and small groups by appointment only. The tour gives a "roll-up-your-sleeves" look at the fermentation and distillation processes. (The bourbon is sent to another location for barrelling and aging). Exclusively exported for over 40 years, Four Roses Kentucky Straight Bourbon Whiskey is now for sale in Kentucky. The distillery is located in an unusual California Spanish Mission-style building constructed around 1910. Call All Young or Jeanette Pfalzer at (502) 839-3436 to schedule a tour. The distillery stops production in the summer.

Created in 1849 by Wiliam Lawson.
Glen Deveron is one of the malts used in the blend.
Today the plant in Coatbridge proiduces about 20 million bottles of William Lawson per year.

William Lawson started out as a whisky merchant in Dundee in the 19th century. The company had severe financial problems during WWII but managed to recover and moved to new Liverpool a few years after the war. At that time Liverpool was bustling with activity and Lawson's business expanded rapidly. They invested in a bottling plant in Coatbridge, necessary due to the increased export, which in turn was achived largely thanks to their business relation with Martini & Rossi.
In 1972 they bought the Macduff Distillery, a natural step to ensure a contious flow of the whisky that was the heart of their blended whisky. Today the annual output of the Coatbridge plant exceeds 20 million bottles.

One of the few companies to move successfully to Scotland from England.

Other sources says it's established in 1851 (Some say 1815 but must be a type error)
Owner :  DCL (Dewar, DCL W.P. Lowrie and Johnnie Walker.)
Latest new : United Distillers
Producer :  ?
Water : Bailliemullich burn (River Spey ?)
Remark : Only Blending or endependent vintage. A component of the Johnnie Walker blends.
They use ex-bourbon casks
The Dailuaine (Dale-yoo-in) distillery have 3 wash stills and 3 spirit stills.

From The Dailuaine distillery folder:
For more than 100 years distillery "pluggies" puffed through the Highland daily, talking supplies of barley and coal to the distilleries and returning loaded with casks of whisky.
At DAILUAINE an engine driver, fireman and railwayman were employed full-time to run the much-loved steam locomotive whose gleaming paintwork and polished brass and copper made her a "joy to behold".
The engine was one of the last to run and is now being restored by United Distillers.

William Mackenzie, a farmer at Carron and Rinnachat, founded the distillery in 1851 in hollow by the Carron Burn and named it from the Gaelic for "the green vale".
By 1863, the arrival of the Strathspey Railway at Carron, only some three miles away, opened up the outside world and influenced the long-term future of Dailuaine Distilllery which was eventually to be linked by its own siding into the network of the "whisky railway" of the Highlands.
When Mackenzie died in 1865 the distillery was let until 1879 when his son, Thomas Mackenzie, became a partner in the business and set out to rebuild Dailuaine in a larger and more modern style and, with an annual output of 160,000 gallons, making it one of the largest Highland distilleries.
In 1891, Mackenzie & Co was converted into a limited liability company, The Dailuaine-Glenlivet Distillery Ltd which seven years later amalgamated with The Talisker Distillery Ltd, Skye, to form Dailuaine-Talisker Distilleries Ltd.
Thomas Mackenzie, who had a substantial interest in the Talisker Distillery, became chairman and managing director of the new company, which also owned a grain whisky distillery in Aberdeen and Imperial Distillery, which Mackenzie had built on the Speyside railway at Carron Station.
By 1907 railway sidings linked Dailuaine with Imperial and Carron warehouses. Mackenzie was an ambitious entrepreneur who strove to develop the company's business in whisky blending as well as distilling, setting up agencies for their brands at home and abroad.

Not long afterwards the whisky industry was affected by a recession and in 1910 the company traded at a loss and went on to suffer a series of misfortunes, with heavily reduced demand, lawsuits and the destruction of the Aberdeen distillery by fire.
When Mackenzie died in 1915, a widower with no family, the business was bought by a consortium of customers, including James Buchanan & Co. Ltd, John Dewar & Sons Ltd and John Walker and Sons Ltd, all part of United Distillers.
Dailuaine was substantially rebuilt after a fire in 1917 which caused extensive damage and production resumed in 1920 after which, for the next 40 years, Dailuaine relied on diverse and ingenious sources of power for lighting and for driving the machinery.
Four steam engines were employed and two water wheels gave an alternative source of power for the maltings. These water wheels worked in tandem; one was sited next to the main engine so that it could be connected during a drought or other emergency, and the other was about 200 metres away, by the burn – the two were coupled by a continuous wire rope supported on overlead pulleys.
Dailuaine was connected to the national electric grid in 1950 and a major reconstruction took place in 1959-60. The stillhouse, which had been increased from four to six stills was modernised in 1965; a new mash tun was installed in 1993.
Two years later the Strathspey railway closed and the much-loved puggies ceased to run. An 0-4-0 saddletank locomotive, made by Barclay of Kilmarnock in 1897, had worked the line until 1939, when it was replaced by another Barclay engine, Dailuaine No. I, which a retired British Rail engine driver described as "truly a joy to behold", with well-cleaned paintwork and polished brass and copper.
Distillery employees gave Dailuaine's puggy its last unofficial run in 1970 when it was removed to the Strathspey Railway Association steam railway at Boat of Garten, Inverness-shire. However, No. I has now been returned to United Distillers and is being restored for display at Aberfeldy Distillery.
Today Dailuaine can be enjoyed as a single malt available at the distillery and selected outlets in bottles featuring the distillery symbol of a badger, a species associated with the surrounding area.

Founded : 1780

Producer : John Jameson & Son – (Irish Distillers) ?
Water : Unknown (Spring water)
Remark :

John Jameson and Son

: Irish Distillers own two distilleries, Bushmills and the modern Midleton complex near Cork. Jameson are produced from whiskies distilled at these two distilleries.

From the back of the box.
When John Jameson opened his distillery in Dublin in 1780 he was carrying on a tradition of whiskey making which had its origins in Ireland over a thousand years ago.
Today Jameson Irish Whiskey is world famous for its distinctive flavour and smooth caracteristics.
Triple distilled from the finest Irish barley and pure spring water and then matured in oak casks. Jameson carries the hallmark of quality which has made it the best selling Irish Whiskey around the world.

From Collins pocket reference :
The arrival in Ireland of Scot John Jameson in the 1770s marked a significant new departure for the growing legal Irish whiskey industry.
Jameson already had connections with the Scottish industry – he had even married into the Haig family – and his son consolidated the business by marrying a daughter of John Stein, whose family who were among the biggest grain distillers in Scotland and who owned Dublin's Bow Street distillery which Jameson Senior was soon to purchase.
His exacting standards and aptitude for the business helped build his firm in the eighteenth century and into the nineteenth. Although own-label sales were still a concept of the future, Jameson's whiskey, sold through merchants, acquired the reputation, with Power's, of being the best of Irish.

A short cut/re-written from The Scotch Whisky Book by Mark Skipworth :
In the 18th century one of the five sons of John Haig, Andrew Haig went into partnership with a member of the Jameson family who went on to become famous in Irish distilling.

From The World Guide to Whisky, By Michael Jackson (Modified) :
The most Irish of whiskeys are the pot still products, matured for long periods in sherry casks, from Jameson of Dublin. Jameson has been known in the past to mature whiskeys for more than 20 years and some of these products were used in blends which may still be found here and there. However none bears the legend 20 years old, since such a blend would also contain younger whiskeys.
There is also a splendidly smooth, mellow Irish which is a blend of very well matured Jameson Whiskys, the youngest being 12 years old, under the Redbreast label. The whiskeys are from Jameson but the brand is bottled and distributed by another respected house, the Irish branch of Gilbey's.
A much less hefty, but still mellow – entusiasts say "sophisticated" – blend of pot still whiskeys, again matured in sherry casks, in produced by Jameson under the name Crested Ten label.
None of these whiskeys is widely found outside Ireland. The regular Jameson Irish Whiskey, the best known and most widely sold product of the house, also has a pronounced pot still character, although its component distillates are younger and generally lighter. It is matured in charred American Oak. This is the favourite whiskey in the Dublin area and the most widely sold in the United States.
As his surname suggests, John Jameson was Scot – his wife was a member of the Haig whisky family – but he moved to Dublin in the 1770s and quickly won reputation as a demanding perfectionist in the production of Irish. Another Scottish distilling family, the Steins, had their Dublin distillery taken over by a Jameson as the dynasty established itself in Ireland. Eventually, the Jameson owned a number of distilleries in Ireland and had two million gallons of whisky maturing under the streets of Dublin.
Members of the family are still involved in the business, though in 1966 Jameson became a part of the newlyformed Irish Distillers Group.
The Jameson headquarters, in dour grey stone, with Georgian, Victorian and more recent buildings, now house Irish Distillers' office in Dublin, along with a smal but interesting museum called Irish Whiskey Corner and a bar-style tasting room, "The Ball of Malt".
Jameson, in Bow Street, near Smithfield fruit market and the river Liffey, used to look across at its neighbour and great Dublin rival, the John Power distillery. Then, for a time, production of Jameson shifted to Power's premises before the structuring of Irish Distillers was completed.
Although Jameson whiskeys are still vatted in Dublin, production begins at the group's distilleries elsewhere in Ireland; the old sites in the city had become just too congested.

Jameson's has a mellow sweetness balanced by fresher, floraly notes. Regarded by many as the classic of its type, this is the biggest selling Irish whiskey outside Ireland.
Words from Michael Jackson : Jameson is the premium brand that best exemplifies the character of "Irish".
It gently expresses the pleasantly perfumy oiliness and roundness of body that is typical.

This is one of the best Irish whiskies in use for Irish coffee – when taking price and quality in note.

Country : Ireland
Type : Irish whiskey
Distillery :  Coleraine distillery limited
Not operational anymore, but visitors are welcome at Old Bushmills where Colerain whiskey is produced.
Phone : 01265-731521
Founded : Distilling had going on in the Coleraine area since early 17'th century, although Coleraine distillery itself didn't become operational until over 200 years later.
Owner : Old Bushmills Distillery.
Bushmills Co. Antrim.
Producer : ?
Water : ?
Remark : At one time, the grain whiskey came from the now extinct Coleraine distillery near Bushmills, and it was comprised mostly of barley (something which is unusual for a grain whiskey, which is usually produced with maize or wheat).
The Coleraine distillery stoped making malt whiskey in the mid-1960s, and close down completely in 1978.
Other sources says Coloraine's own distillery closed in the early 1980s.

From the book 'The Scottish Collection' Classic Malts by Carol P. Shaw :
Previously one of the most respected of Ireland's distilleries, Coleraine fell victim to the decline and rationalisation of the Irish whiskey industry this century. Distilling had been going on in the Coleraine area since the early seventeenth century, although the distillery itself did not become operational until over two hundred years later. Its reputation was high in the later nineteenth century, to the extent that Coleraine supplied whiskey to the House of Commons, subsequently selling their product under the name of ' Old Irish HC'. But like so many Irish distilleries, Coleraine suffered badly in the twentieth century, eventually being bought by the owners of Bushmills. Production continued very intermittently, latterly in grain whiskey, until closure came in 1978.

Cardhu

NEEDS TO BE EXPERIENCED

From its origins in a small farmhouse on the windswept braes below Dallas Moor to its international acclaim as a great Highland Single Malt Whisky, the history of the Cardhu is a classic of its kind. Distilling whisky was, in Scotland's history, a small-scale family affair.

The name of the farm in its anglicised spelling was Cardow Farm, but to the gaelic speaking locals, it was Cardhu -The Black Rock.

It is a unique characteristic of Cardhu that, in a whisky world dominated by men, women have played a major part in the history of the brand.

It was under Elizabeth Cumming's direction that Cardhu grew from a tiny, local distillery to one of the leading Speyside Single Malts.

The quality of Cardhu's product attracted many would be buyers. Finally in 1893, Elizabeth sold the distillery to John Walker & Sons of Kilmarnock and her son was installed as manager of the distillery, and a board member of Walker's with a substantial shareholding. Although a few bottles of Cardhu single malt became available over the years it was a key ingredient of the firm's famous "Johnnie Walker" that Cardhu was enjoyed, unknowingly, by Scotch drinkers the world over.

The history of the distillery, its treasured arts and traditions, the pure, clean flavour of the natural Highland ingredients, the care of making and the long, slow maturing are all to be tasted in a glass of Golden Cardhu – Truly a great Highland Single Malt.

A request from Chris:
Dear sir/madam

Song Farewell to Whisky

This song is traditional to both Scotland and the North of Ireland.

O Johnnie, my man, do ye no think o' risin'?
The day is weel spent and the night's comin' on.
The siller's deen and the gill stoup is empty,
O rise ye now Johnnie and come awa' hame.

Bairnies at hame, they're roarin and greetin',
Nae meal in the barrow to feed their wee wames.
You're sittin' there drinkin' and leave us lamentin',
So rise ye now Johnnie and come awa' hame.

Who's that at the door that is speakin' so kindly,
It's the voice of my wee wifie, Maggie by name.
Come in my dear lassie and sit in beside me
now rise up my Johnnie and come awa' hame.

Well Johnnie, my man, do you no mind the courtin
Neither alehouse or tavern ne'er were we in
We spect three days by the sweet-scented roses
And ne'er gave a thought on goin' awa' hame.

Ah well do I mind these times that ye speak of
Those days they are gone and ne'er come again
But as for the present we will try for to mend it
Sae gie's yer hand Maggie and I'll awa' hame

As Johnnie arose, he banged the door open
Sayin cursed be the tavern that e'er let me in
And cursed be the whisky that makes me so thirsty
so fare thee well whisky, I'm awa' hame.
